Crock Pot Santa Fe Chicken RECIPE

I’ve made this recipe twice and have recommended it to friends who also love it. It is so simple and tasty! It is the easiest meal to have on hand for crazy evening schedules, which we seem to have plenty of!
We have a baseball game and practice tonight. Some will eat before the game and some will eat after. Just 2.5 days of school are left after today….

Yesterday’s plans went sadly awry due to some car trouble which led to me packing up my daughter to drive the 45 minutes to pick up my husband. It was, of course, during dinner making time. Oh, well. Sometimes things happen. So, today’s plan really is to make pancakes and have fresh fruit with it.
We are having Crock Pot Chicken Taco Chili. Same website as the Santa Fe Chicken that you are having! DH and I are still sticking to Weight Watchers……18 weeks in, and I am down 30 lbs! DH is down almost 50!! We love having a meal plan every night. It has really helped us stick to WW, and not be sucked in to ordering take out, because we have “nothing to eat”

Yes, we pay for the monthly access plan. Its 42.95 per month per person. Seems expensive, but I think that’s part of why I am sticking to it. If I’m going to pay money for it, I’m going to do my part to make sure it works! We have access to all of the online info, and the apps on our smart phones. Having the apps on our phones really helps. We can scan a barcode in the store, and immediately know the points value.

Tonight I’m making eggplant with one of my last bags of tomatoes from the freezer. If my sony comes home for dinner I’ll make some noodles to go under his eggplant.
Michelle, how did your beans come out from the other day?
The beans were a sad, sad story. I did them in the crock pot on low. I tested them at about 1 pm and they were pretty crunchy so I put them on high and ran to the school. When I got back at 4 pm they were like mashed potato consistency. We did not eat them…I will try again on the stove!
I’m so sorry they didn’t turn out for you. They’re actually one of my favorite things to make!
I may have to stick with the canned type! LOL. I see Pioneer woman has a killer recipe, but hers calls for canned beans.
