Creamy Cucumber & Onion Salad
My daughter and I are doing some shopping today to get ready for a wedding. I won’t be doing a lot of dinner preparation, so I decided we’d have a variety of sandwiches just to make things easy and to make everyone happy at dinner.
My husband has been requesting his favorite creamy cucumber & onion salad. I’ve made that ahead!

Maybe I’ll just come to your house for dinner. I love sandwiches! I’m planning on baked potatoes (but in the microwave since it gets to hot with the oven on) with a variety of toppings to choose from.
Sandwich night does sound so good! If you have an extra moment, I’d love to know how you do creamy cucumber and onion. My fave is tomato and cucumber with mayo and maybe some basil.
Tonight we’re having chicken salad kind of like your burrito bowls.
