Smothered Chicken with Cilantro Lime Rice

I found this Cilantro Lime Rice recipe on Pinterest, and just could not take my mind off of it! I’m a huge Chipotle fan, so this rice sounds wonderful. We’ll be having it with chicken, smothered in onions and cheddar cheese.

I’m going to experiment tonight and try some elk lettuce wraps. I’ve made them with deer meat before with really good results, so I’m sure the elk will be just as good if not better.
