We’re using some leftover homemade meatballs tonight to whip up a quick and easy frugal meal.  If you haven’t tried my homemade roll recipe, I suggest you put it to the test.  I use this bread recipe quite often because it is easy and far better than store bought rolls.

Since we have three different practices tonight, and we’ll be eating on the go, I decided that finger foods would be best!

We feasted on ham yesterday for Easter and have a ham bone and lots of leftover ham.  I’ve decided to make this Crock Pot Cheesy Ham & Potato Soup for dinner!  I’ve made it before an it is quite good!

TGIF!  It’s been a long week here and we’re looking forward to the holiday weekend.  My kids love these fries, so we’re having them for dinner tonight with our burgers!

Ingredients
Seasoned Oven Fries
Potatoes
Salt
Oregano
Garlic Powder
Olive Oil
Other optional ingredients include: onion powder, pepper, parmesan cheese, chili powder…
Instructions
Slice potatoes into wedges with the skin on and place them in a mixing bowl. Drizzle olive oil onto the potatoes and mix until coated. Season with salt, garlic powder and oregano (or any other seasonings you like) to taste.
Place the seasoned potatoes onto a baking sheet and bake at 425 for 25 minutes. Toss potatoes about halfway through cooking.

My kids have been on Easter break since Tuesday at 1:30 pm.  It’s still snowing here, so we’ve had some long indoor hours of boredom.  They go outside for a few hours and then all of the clothing needs to be dried. Repeat.

When I asked them what they wanted to do today, the Hibachi was mentioned.  The Hibachi is not on the agenda, but I did change my menu so we could have Hibachi at home!

Meal planning is an enormous money-saver at our house.  My goal four our family meals is to stay near $5 for our dinner for our family of 5.  This can be difficult these days but I’ve learned to balance the higher cost meals with a lower cost meal to meet my $5 per night average.  This means we can have shrimp, steak and other foods that wouldn’t normally hit that $5 mark.

Are you a goal oriented person?  I find that when there is no goal I get lost.  This is particularly true when shopping for groceries!  With my $5 dinner goal in mind, it’s less likely that I’ll overspend at the store.

Winter weather is upon us again.  The kids are home from school again today for two extra hours.  I’m keeping my fingers crossed that they do not cancel all-together.  I am ready for this crazy winter weather to end!

Easy Ranch Chicken Wraps with Veggies

Is it just my kids or do all kids come home from school with hunger that can’t wait for an hour??  I’ve found that if I don’t have dinner ready when they walk through the door at 4 pm, they eat whatever they can find.

Tonight’s meal, is geared toward this problem.  The chicken is cooked ahead, so they can come home and choose their toppings and eat right away.

Our household is finally back to normal.  What’s normal, anyway?  The kids are finally back to school, even though the week-long stomach bug ended with a rather scary looking rash.  I’m glad to be done with it.

We’re seeing signs of spring here.  The robins have been out in the yard between the squalls of snow…
